I Used To Be In AmeriCorps


I used to be in AmeriCorps. For my orientation with particular organization that I was to serve as an AmeriCorps Volunteer Service Member we were flown to Clearwater, Florida. During this great experience and orientation, we went kayaking. I was able to kayak for the first time in Florida. I want to say it was in Miami, and after sharing this on other social media outlets, it may have been Key West, I remember someone pointing out that Cuba was near.

This was my first time paddling the waters along with others I did not know before this opportunity. Florida is also where I tried Mahi-Mahi.

In this writing, I realized how great of an opportunity it was! I had never been to Florida before then and I had not been kayaking before then!

God will orchestrate different things in our lives and they build up and add up to a bigger picture.

Maple Brown Sugar Honey Crunch n Oats With Almonds Cereal Peanut Butter Balls with EVOO


Ingredients

Peanut Butter

Instant Oatmeal Packs – Maple Brown Sugar

Midville Honey Crunch n Oats With Almonds Cereal (Available at Aldi)

Extra Virgin Olive Oil

All items can be purchased at your local grocery store or grocery store of choice. You do not have to get the exact brand of cereal, for this recipe the Midville brand (An Aldi’s brand) was used.

Scoop   Peanut butter on a plate using a teaspoon.

Add      Instant Oatmeal to the peanut butter.

Add      Extra Virgin Olive Oil

Add     Honey Crunch n Oats with Almonds Cereal

Mix     Together with teaspoon.

Roll    Into bite size balls using the Maple Brown Sugar Instant Oatmeal as a dusting into circular balls.

Make  Evenly circular shape balls.

Refrigerate For the mold of the circular shape balls to set.

Once set or cold, enjoy!

These are great for breakfast or a snack!

Nectarine & Mushroom Salad©


This is a salad that I created and made in August 2012! Enjoy! ❤

Sautéed Portabella Mushrooms, Red Onions, Green Peppers in EVOO, placed on top of Organic Half Spring/Half Baby Spinach Salad Mix with Cucumbers, Tomatoes, Colby Cheese, and Nectarines!

Ingredients:

Portabella Mushrooms

Red Onion

Green Pepper

Extra Virgin Olive Oil

Organic Half Spring-Half Baby Spinach Salad Mix

Cucumbers

Tomatoes

Finely Shredded Colby Cheese

Nectarines

Buttermilk Ranch

In a stove top pan, heat EVOO, add portabella mushrooms, green peppers, and red onion, sautee until desired.

Place the sauteed mix in top of the Organic Half Spring – Half Baby Spinach.

Add sliced Nectarines

Add Buttermilk Ranch Dressing or your choice of dressing.

A Healthy Breakfast


Here’s a quick, simple, and healthy breakfast that is delicious and filling!

Ingredients:

– 100% Whole Grain Old Fashion Oats
– Fresh Strawberries
– Fresh Blackberries
– 1 Banana (Use more depending on your serving size.)
– EVOO (In place of butter or margarine)
– Clover Honey
– Ground Cinnamon
– Ground Nutmeg
– Sliced Almonds

Directions:

Determine your serving size and prepare your oats.

Boil water and salt.
Stir in oats.
Cook for about 5 minutes over medium heat, stirring occasionally. During this process stir in your EVOO, Ground Cinnamon & Ground Nutmeg.

Once your oats are prepared place your oats in the serving bowl. Add clover honey, stir.

Sprinkle slice almonds on top of the oats. Add blackberries, sliced strawberries, and sliced bananas on top of the oats.

Serve with wheat or multi-grain toast and enjoy!

Absolutely Delicious!

Health Kick a.k.a. Lifestyle Staples!!!


I thought I share with you “some” of my “favs” when it comes to eating healthy. I have come to find these items to be tasty as well as nutritious for you!

Let’s start with Riceworks Gourmet Brown Rice Chips! At the time of this initial blog post priced at $2.50 at my your local Walmart store! Each bag contains different ingredients due to the different flavors, but one thing you can count on is that each chip has been made with whole grain brown rice and rice flour. A definite plus! Whole Grains are one of the best things out here now-a-days for your body! If you are a big chip eater and looking to curb your desire for the salty, hydrogenated fat snack, I would definitely recommend RiceWorks! You won’t be disappointed. I have tried them all but the Tangy Bar-be-Que flavor. I have yet to come across that flavor in my geographical area. But I’m sure it’s as good as the others. The sea salt flavor is definitely good with guacamole and salsa! Try it! 🙂

TERRA Exotic Vegetable Chips…..Love their product! They come in different flavors as well. What’s best about this product is that they are VEGETABLES! Not just any vegetables either. The bag is filled with a combination of exotic vegetables: a seasonal mix of taro, sweet potato, yuca, batata, parsnip, and ruby taro. Delicious! The Mediterranean Flavor & The Sweet Potato brand are my favs! 🙂

“Agua”, Spanish for “Water”…Funny, I learned this years ago as a kid watching Sesame Street…lol….It’s the best thing out there for your body and total health. Did you know that your body is estimated to be 60 to 70 percent water? Yes!!! So drink up! It’s great for your skin as well.

Last but not least my new found breakfast on the go friend, none other than the Lemon Zest Luna bar! Efficient & vitamin packed for those who are on the go! 🙂

These are just a few of my favorites, I have other things that I like as well. When you get some time try these out and see how they work for you!

Turkey & Black Bean Nachos w/Blue Corn & Sesame Tortilla Chips by Bridget D. Webb

Turkey & Black Bean Nachos w/Blue Corn & Sesame Tortilla Chips©


A healthy spin on Nachos by yours truly! Enjoy!

Ingredients:

1lb. of Hormone & Steroid Free Ground Turkey

16 oz. can of Black Beans

World Table Roasted Salsa Verde – Available at Wal-Mart

World Table Sweet Heat Salsa – Available at Wal-Mart

Shredded Cheese

Marketside Organic Half & Half Mix (Half Spring Mix/Half Baby Spinach) – Available at Wal-Mart

World Table Blue Corn & Sesame Tortilla Chips – Available at Wal-Mart

Extra Virgin Olive Oil (EVOO)

Salt

Pepper

Sour Cream (Optional)

Guacamole (Optional)

Directions:

In a skillet, add EVOO. Add enough to coat the skillet. Add your fresh ground turkey.

Season with salt and pepper.

Cook on medium heat until the ground turkey is fully cooked and browned.

Once your ground turkey has browned add your can of rinsed black beans to the skillet.

Let it cook on medium to low heat, until your beans are heated well through.

Grab a plate and beginning layering your nachos starting first with the Blue Corn & Sesame Tortilla Corn Chips.

Add the Organic Spring Mix Lettuce

Add the Ground Turkey

Add Shredded Cheese

Add the Roasted Salsa Verde

Add the Sweet Heat Salsa

Once your done layering, you can also garnish the nachos with your choice of sour cream or guacamole! Simply Delicioso! Enjoy!
