Power Burrito – Wrap©


This is not a spin off Taco Bell’s Power Burrito.

I called it this because of the black beans and rice and the other healthy ingredients and how black beans make me feel. Black beans fuel me and give me energy.

Brown Rice

Chopped Mango
Chopped Southern Peaches
Sharp Shredded Cheese
Salsa Con Queso

Roasted Sunflower Seeds with Sea Salt
Spinach
Rotisserie Chicken
I was going to do a vegetable one and one with chicken. I ended up doing one with everything on it. 🙂

Nectarine & Mushroom Salad©


This is a salad that I created and made in August 2012! Enjoy! ❤

Sautéed Portabella Mushrooms, Red Onions, Green Peppers in EVOO, placed on top of Organic Half Spring/Half Baby Spinach Salad Mix with Cucumbers, Tomatoes, Colby Cheese, and Nectarines!

Ingredients:

Portabella Mushrooms

Red Onion

Green Pepper

Extra Virgin Olive Oil

Organic Half Spring-Half Baby Spinach Salad Mix

Cucumbers

Tomatoes

Finely Shredded Colby Cheese

Nectarines

Buttermilk Ranch

In a stove top pan, heat EVOO, add portabella mushrooms, green peppers, and red onion, sautee until desired.

Place the sauteed mix in top of the Organic Half Spring – Half Baby Spinach.

Add sliced Nectarines

Add Buttermilk Ranch Dressing or your choice of dressing.

Breakfast / Brunch Muffins – Turkey Sausage Corn Bread Muffins©

An original recipe by yours truly.

They can be served for breakfast, brunch, or dinner!

Breakfast.Brunch Muffins - Turkey Sausage Cornbread Muffins

Ingredients

Turkey Sausage Links – Fully Cooked

Spinach

Shredded Cheese

Corn Bread/Muffin Mix

Egg

Milk

1. Microwave links. Chop finely

2. Pour Corn bread/muffin mix in bowl. Follow the manufacturer’s directions for the brand of cornbread/muffin mix you choose.

3. Add your finely chopped turkey links

4. Add your finely chopped spinach.

5. Add your shredded cheese.

For this recipe I used my sister’s MINI CUPCAKE MAKER!
